When making sourdough, the dough undergoes fermentation, which produces gases that become trapped inside. These gases are what leaven the bread, thanks to the sourdough starter. Eventually, these gases need to escape. Scoring the dough directs where the gases will be released, helping to ensure a better final appearance of the bread. Additionally, the scoring can create a unique artistic design, turning it into a true form of art.

Need a Bread Lame?

Here are some creative ideas for scoring bread to enhance both its appearance and texture:

Classic Cross: Simple but elegant, scoring a deep cross on the top of your loaf adds a rustic touch and helps the bread expand during baking.

Wheat Sheaf: Create a pattern resembling a wheat sheaf or spikes by making angled cuts that fan out from a central point. This gives a beautiful, organic look.

  3. Dip the blade into the water before scoring. This will help the blade glide smoothly, resulting in clean cuts.
  4. Place the bread in the oven immediately after scoring. Allowing it to sit can weaken the dough and cause it to deflate.
  5. Choose a lame that feels comfortable in your hands. There are various styles available, so finding one that you’re most comfortable with will make the process easier.

A bread lame is simply a handle holding a thin razor blade. it is used to score or slash the dough just before the bread is placed in the oven allowing it to rise properly during baking.

Do I need a bread lame?

A bread lame is not a required tool, but it can make the process of scoring your bread much easier. In place of a lame, a sharp knife or a single-edged razor blade can do the trick. If you bake bread often though, having a dedicated lame will provide the most control and precision for clean cuts.

Choosing the right bread lame.

What to consider when choosing a lame. The blade style, the handle size and shape, and blade exposure, all play a factor in choosing a bread lame.

Blade styles can be straight or curved, and the choice largely depends on personal preference. Some beginners find that a straight blade is easier to handle when making cuts and decorating. A curved bread lame, on the other hand, can slip under the surface of the dough, creating a more pronounced flap than a straight blade. This feature allows for a more dramatic “ear” to rise during baking. A straight bread lame is suitable for both straight cuts and decorative designs. An adjustable curved lame allows the user to bend the blade to a comfortable angle, which can be modified as needed.

More blade exposure generally results in deeper scores with a single slice. Lower blade exposure can provide better control for design cuts, but you may need to make multiple cuts to achieve a deep ear cut.

  • Baking twine – You can use baking twine in a few different ways while scoring your dough. One option is to use the twine to create indentations, ensuring clean, straight lines.
