Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • ¾ cup milk, warmed
  • 1 ½ cups shredded cheddar cheese
  • ¼ teaspoon salt, plus more to taste
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika or mustard powder (optional)

Optional Add-Ins

  • Diced jalapeños
  • Green chilies
  • A splash of hot sauce
  • Cooked ground beef or sausage

Instructions

  1. In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about one minute. You want it lightly golden and bubbly, not brown.
  2. Slowly pour in the milk while whisking constantly. This prevents lumps and creates that silky base. Let it simmer for a few minutes until thickened.
  3. Lower the heat and add the shredded cheese a handful at a time, stirring until fully melted before adding more. This is the secret to a smooth, glossy dip.
  4. Stir in salt, garlic powder, and paprika. Taste and adjust as needed. Add any extras here if you are customizing.
  5. Serve immediately while warm and creamy. If it thickens as it sits, a splash of milk brings it right back to life.
