Strawberry Lemon Sourdough Focaccia

- 1/3 cup Active Starter
- 1 1/2 cups Warm Water
- 5 tbsp Honey
- 2 tsp Salt
- 4 cups Flour
- 1/2 cup Fresh Strawberries (diced)
Strawberry Lemon Filling
- 3-4 Fresh strawberries (sliced)
- 2 tbsp Lemon Juice
- 3 tbsp Melted Butter
- 1/2 cup Sugar
Cream Cheese Frosting
- 2 oz Softened Cream Cheese
- 1 1/2 cups powdered Sugar
- 3 tbsp Milk
- 1 tsp Vanilla
- 2 tbsp Softened Butter
- In a large bowl, combine active starter and warm water until well mixed. Add honey, salt, and flour. Mix until well combined. at a certain point, it may become easier to mix with your hands
- Once mixed well, cover the bowl with a damp towel or lid. let rest for 30 minutes. Then perform your first round of stretch and folds. repeat two more times. Cover again and let the dough rise at room temperature for 8-10 hours, or until the dough has at least doubled in size.
- Once the dough has doubled in size, lay out onto lightly floured surface. stretch dough into a large rectangle. spread the diced strawberries throughout the dough. fold the dough over itself to roughly the sizeOnce the dough has doubled in size, place it on a lightly floured surface. Stretch the dough into a large rectangle and spread the diced strawberries evenly throughout. Fold the dough over itself to fit roughly the size of the baking dish. of the baking dish.
- Prep your baking dish with oil. Turn your dough out into your baking dish and gently spread the corners to try to fill the dish. Cover and let rest for 8-10 hours, or until the dough has doubled in size.
- Next, use your fingers to create dimples in the bread, being careful not to pop all the bubbles. Once the bread is dimpled, mix the melted butter, lemon juice, and sugar until well combined. Place the sliced strawberries evenly over the bread. Pour the mixture over the dough and strawberries, encouraging it to fill the dimples.
- Preheat oven to 425°F. Bake the bread for 25 minutes or until golden brown. Once done, pull the focaccia out and let it cool a bit while you make the cream cheese frosting.
- Making the cream cheese frosting. Mix softened cream cheese, softened butter, and milk until smooth. Add powdered sugar and vanilla until smooth and creamy. Drizzle frosting over the focaccia bread while it’s still slightly warm. Allow the frosting to soak into the bread a bit.
