Not at all! I personally think fresh strawberries taste best, but you could also use dried strawberries or even frozen ones.
Fresh squeezed or concentrate?
Both options are great. I used concentrate because that’s what I had. Using freshly squeezed juice would undoubtedly make it even better!
Why did it turn out mushy?
Fresh strawberries can release a lot of moisture as they bake. This can make your focaccia wet or cause it to collapse in the center. Make sure not to add too many fresh strawberries. Stick to a light, even scattering of diced strawberries.
Want more lemon flavor?
If it’s not tangy enough, add a little lemon zest to the dough when incorporating the diced strawberries. This zest will provide an intense lemon flavor without adding extra liquid.
