Why You Will Love Homemade Biscuits

If you’re looking to embrace a rustic, homemade lifestyle, baking biscuits is an excellent starting point. This delectable treat is straightforward and accessible, making it perfect for beginners or anyone wanting to reconnect with the simplicity of home cooking.

Making biscuits doesn’t demand any special equipment—the most you might need is a mixing bowl, a rolling pin, and a baking sheet. There are no lengthy fermentation processes or intricate techniques involved; instead, the key lies in using high-quality ingredients and handling the dough with care.

You can experiment with different flours, fats, and add-ins, allowing for creativity while keeping the process uncomplicated. A gentle touch is essential; overworking the dough can lead to tough biscuits, while a light hand ensures that they remain fluffy and tender. With just a few basic steps, you can easily fill your kitchen with the warm, inviting aroma of freshly baked biscuits, making them a delightful addition to your home-cooked meals.

Homemade biscuits are:

  • Made with real, pantry-staple ingredients
  • Free from preservatives and fillers
  • Quick enough for busy Schedules
  • Perfect for sweet or savory meals

They’re humble food, but done right, they feel like a small act of care.

Secrets for Perfect Flaky Biscuits

Perfect flaky biscuits are all about technique. While the ingredient list may be short, the way you handle the dough makes all the difference. These secrets will help you create biscuits with tall layers, tender centers, and those irresistible flaky edges.

1. Keep Everything Cold

Cold fat is the foundation of flaky biscuits. When cold butter hits a hot oven, it releases steam, creating those signature layers.

  • Use very cold butter (or even frozen, then grated)
  • Chill your bowl and flour if your kitchen is warm
  • If the dough starts feeling soft, pop it in the fridge for a few minutes before baking

2. Use the Right Fat

Butter gives biscuits their rich flavor, while shortening or lard can increase tenderness. A combination of fats can deliver the best of both worlds—butter for flavor, and another fat for structure and lift.

3. Handle the Dough Gently

Overworking biscuit dough develops gluten, which leads to tough biscuits. Mix just until the dough comes together—it should look a little shaggy. Gentle hands mean tender results.

4. Fold for Flaky Layers

Instead of kneading, use a simple folding method:

  • Pat the dough into a rectangle
  • Fold it over itself like a letter
  • Repeat 2–3 times

This creates distinct layers without overworking the dough.

5. Don’t Twist the Cutter

When cutting biscuits, press straight down with a sharp cutter. Twisting seals the edges and prevents the biscuits from rising evenly. For extra lift, dip the cutter in flour between cuts.

6. Place Biscuits Close Together

Set biscuits close together on the baking sheet so they rise upward instead of spreading outward. Touching sides help create taller, softer centers.

7. Bake Hot and Fast

A hot oven is essential. High heat activates the leavening quickly and creates steam from the butter, resulting in a better rise and flakier layers. Biscuits should go into a fully preheated oven.

8. Finish with Butter (Optional, but Recommended)

Brushing warm biscuits with melted butter adds flavor and gives them that bakery-style shine—because there’s no such thing as too much butter when it comes to biscuits.

Cozy Biscuit Variations to Try

Once you’re comfortable with the basics, biscuits are easy to adapt:

  • Cheddar + herb biscuits: Add shredded cheddar and chopped herbs
  • Honey biscuits: Swap sugar for honey and brush tops with butter
  • Buttermilk biscuits: Use buttermilk for extra tenderness
  • Skillet biscuits: Bake in cast iron for crisp edges and soft centers

Storing, Freezing, and Reheating

Homemade biscuits are best enjoyed fresh, but with proper storage and reheating, you can preserve their flaky layers and tender centers for later. Whether you’re saving leftovers or prepping ahead, these tips will help your biscuits taste just as good as the day they were baked.

How to Store Homemade Biscuits

Allow biscuits to cool completely before storing to prevent excess moisture.

  • Room temperature: Store in an airtight container or zip-top bag for up to 2 days.
  • For softer biscuits: Line the container with a paper towel to absorb moisture.
  • Avoid refrigeration: The fridge can dry biscuits out and dull their flavor.

How to Freeze Homemade Biscuits

Biscuits freeze exceptionally well and are perfect for make-ahead breakfasts.

To freeze baked biscuits:

  • Let biscuits cool completely.
  • Wrap individually or layer with parchment paper in a freezer-safe bag.
  • Freeze for up to 2–3 months.

To freeze unbaked biscuits (recommended for best freshness):

  • Cut biscuits and place them on a lined baking sheet.
  • Freeze until solid, then transfer to a freezer-safe bag.
  • Bake directly from frozen, adding 2–5 minutes to the bake time.

How to Reheat Biscuits

Reheating properly helps restore warmth without drying them out.

  • Oven: Reheat at 325–350°F for 8–12 minutes.
  • Toaster oven: Great for single biscuits or small batches.
  • Microwave (if needed): Wrap in a damp paper towel and heat in short 10–15 second intervals.

For extra moisture, loosely wrap biscuits in foil while reheating.

Refreshing Day-Old or Frozen Biscuits

If biscuits feel dry, lightly brush or mist them with water before reheating. This helps revive steam inside the biscuit and brings back a soft interior with flaky layers.
